Canadian Cheese Soup

Ingredients4 tbsp butter1 small onion, finely chopped2 carrots, grated2 celery stalks, finely diced¼ cup all-purpose flour4 cups chicken broth2 cups potatoes, peeled and diced2 cups whole milk2 cups sharp cheddar cheese, freshly grated½ tsp dried thyme½ tsp paprikaSalt and black pepper, to taste4 slices bacon, cooked and crumbled (optional)Chopped parsley or green onions for garnishInstructionsIn a large pot, melt the butter over medium heat.Add the onion, carrots, and celery.
